2 tbs extra virgin olive oil
2 carrots, chopped
1 small red onion, chopped
2 cloves garlic, minced
1 (25-ounce) jar Dell’Amore Spicy Recipe sauce
2 (14-ounce) cans reduced sodium, chicken broth
1 (15-ounce) can cannellini beans, RINSED and drained 1/2 t red pepper flakes
1/2 cup pastina pasta (or any small pasta)
1/2 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
grated parmesan cheese
1) Heat olive oil in a large Dutch Oven over medium-high heat.
2) Add the carrots, onion, and garlic and sauté until soft, about 10 minutes.
3) Add the jar of Dell’Amore Spicy Recipe sauce, chicken broth, cannellini beans, red pepper flakes, pasta, salt and pepper.
Simmer for 20 minutes.
4) Ladle into bowls and top with parmesan, and serve with crusty loaf of bread.
